By  |

These shredded chicken tacos are quick, easy and healthy! You can make the base in the crockpot, in the instant pot in the oven or on the stovetop. You can even buy a rotisserie chicken from the grocery store. Dinner doesn’t get much easier or more delicious than this!

When Taco Tuesday doesn’t conjure up that spark that it usually does, blow everyone’s mind with these rowdy little tacos!

They can be individualized to everyone in the family – celebrating the uniqueness of taste and creativity we all bring to the table (wink!), through toppings and wrappings!

Making the Base of Your Tacos: Shredded Chicken

These tacos are made with shredded chicken. You can grab a rotisserie chicken from the grocery store and pull the meat off, but once you see how easy it is to make your own shredded chicken, you’ll be whipping up a batch on your own.

Watch the video below to see the easiest way to make shredded chicken.

If you make a batch of shredded chicken as part of your monthly meal prep, you can serve these shredded chicken tacos at least once a week and have them on the table in no time!

How to Make Shredded Chicken Tacos

Once you have your base (shredded chicken), the rest is about as easy as it gets.

Simply mix the shredded chicken with our homemade taco seasoning (or a packet from the grocery store).

Then add the mixture to the base of your choice – like blue corn taco shells, gluten free wraps or even romaine lettuce.

Toppings can vary based on the personal preference of everyone in your family, making these truly customizable and loved by all.

At our house, we’re all about avocado, purple onions, tomatoes, shredded cheese and sour cream. And a few people in the house like to add jalapeno peppers.

MY FAVORITE SHREDDED CHICKEN RECIPE IDEAS

Listen, when I first started making batches of shredded chicken, I kept things fairly basic. I used it in sandwiches and tossed it on my salads.

But I’ve come a long way, baby.

I’ve figured out a way to incorporate shredded chicken into just about everything we’re eating. I don’t because – you know – the entire family might start a revolt against shredded chicken.

BUT – it’s comforting to know that even on the nights when we have no food in the house – I still have shredded chicken and can whip up SOMETHING to eat.

Here are a few of my (and my family’s) favorites:
