Making the Base of Your Tacos: Shredded Chicken

These tacos are made with shredded chicken. You can grab a rotisserie chicken from the grocery store and pull the meat off, but once you see how easy it is to make your own shredded chicken, you’ll be whipping up a batch on your own.

If you make a batch of shredded chicken as part of your monthly meal prep, you can serve these shredded chicken tacos at least once a week and have them on the table in no time!

How to Make Shredded Chicken Tacos

Once you have your base (shredded chicken), the rest is about as easy as it gets.

Simply mix the shredded chicken with our homemade taco seasoning (or a packet from the grocery store).

Then add the mixture to the base of your choice – like blue corn taco shells, gluten free wraps or even romaine lettuce.

Toppings can vary based on the personal preference of everyone in your family, making these truly customizable and loved by all.

At our house, we’re all about avocado, purple onions, tomatoes, shredded cheese and sour cream. And a few people in the house like to add jalapeno peppers.

Homemade Taco Seasoning

  • 1 Tbsp. Chili Powder
  • 1/4 tsp. Garlic Powder
  • 1/4 tsp. Onion Powder
  • 1/4 tsp. Crushed Red Pepper Flakes
  • 1/4 tsp. Dried Oregano
  • 1/2 tsp. Paprika
  • 1 1/2 tsp. Ground Cumin
  • 1 tsp. Sea Salt
  • 1 tsp. Black Pepper (optional)

Toppings (Ideas)

  • Sliced Avocado
  • Shredded Cheddar Cheese
  • Chopped Onion
  • Sliced Cherry Tomatoes
  • Sliced Jalapeno Peppers
  • Salsa
  • Cilantro
  • ETC

Shell Options

  • Traditional Taco Shells
  • Blue Corn Taco Shells
  • Fajitas of your choice (great gluten and corn-free options)
  • Rice
  • Romaine Lettuce

Instructions

  1. In medium saucepan, over low heat, combine shredded chicken and broth.
  2. Add homemade taco seasoning and continue to stir until shredded chicken is coated, adding more broth as needed to attain desired “sauciness.”  
  3. Add chicken to the “shell” of your choice (Romaine leaf, plain or flavored tortillas, brown rice, or blue corn shells.)
  4. Add desired toppings and enjoy!

MY FAVORITE SHREDDED CHICKEN RECIPE IDEAS

Listen, when I first started making batches of shredded chicken, I kept things fairly basic. I used it in sandwiches and tossed it on my salads.
