How to Make Past Chicken Alredo Casserole
Only SEVEN total ingredients!
This is comfort food like no other dish. Creamy, flavorful and 100% kid approved. Gooey, cheesy pasta with chunks of tender and delicious chicken surrounded by penne pasta = a meal that everyone in the family will love!
You can level this up by adding some chopped broccoli, peas or green beans, but we usually just serve the veggies on the side. Another option is to add fresh chopped mushrooms. This Pasta Chicken Alfredo Casserole freezes up beautifully and can feed the whole family after a long day of adventure.
To get started, you'll want to cook one pound of boneless, skinless chicken breasts and then cube them. You can follow thsee instructions for making shredded chicken for options on how to cook your chicken (in the oven, on the stove, in the instant pot or even in the crockpot). Instead of shredding the chicken, cube it instead.
While the chicken is cooking, cook 1 lb of penne pasta, following the al dente instructions.
Combine the cooked chicken and pasta. Add one cup of chicken broth, ½ cup finely chopped onions, three cloves of minced garlic, and one jar of Alfredo sauce. Mix well.
Spread half the mixture into a greased 9x13 casserole dish. Layer one cup shredded mozzarella cheese. Add the rest of the pasta mixture and top with another cup of cheese.
TO PREPARE FOR FREEZING
Cover with plastic wrap (we like Press & Seal) to eliminate any air that could cause freezer burn.
Then cover with foil. Clearly label the top with the name of the item, cooking temperature and time. Then pop in your freezer!
Store in the freezer for up to 6 months.
TO EAT
When you’re ready to eat your Pasta Chicken Alfredo Casserole, remove from freezer and let thaw overnight in the fridge.
Once thawed, remove the layer of plastic wrap and re-cover with tin foil. Bake at 375 degrees for 20-25 minutes. Remove cover and cook for additional 10 minutes.
If you don’t have time to thaw in advance, that’s okay! Remove the layer of plastic wrap, re-cover with tin foil and bake at 350 degrees for one hour. Remove cover and bake for an additional 15 minutes.

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 lb penne pasta
- 1 cup chicken broth
- ½ cup finely chopped onions
- 3 cloves garlic, minced
- 1 jar Alfredo sauce (16oz)
- 2 cups shredded mozzarella cheese
Instructions
- Cook 1 lb chicken breasts and cut into 1-inch cubes. (Here's a great resource for different options for cooking your chicken, including instant pot, crockpot, stovetop and oven.)
- Cook penne pasta in a large pot, following the al dente instructions.
- Combine cooked pasta and chicken. Add broth, onions, minced garlic and alfredo sauce. Mix well.
- Pour half the mixture into a greased 9x13 casserole dish. Top with one cup cheese. Add the remaining pasta mixture and top with remaining cheese.
PREPARE FOR FREEZING
Cover with saran wrap (we like Press and Seal). Press down into the sides of the cooking pan to ensure that no air is trapped under the wrap. This will protect your dish from freezer burn and prolong its freezer life.
Then, cover with foil. Write the name of the dish and baking instructions on the top along with the date.
Freeze for up to six months.
TO BAKE
Thaw overnight in the fridge. Preheat oven to 375 degrees.
Remove saran wrap and re-cover with tin foil.
Cook covered for 20-25 minutes. Remove cover and cook 10 additional minutes.
To Cook from Frozen: Preheat oven to 350 degrees. Remove plastic wrap and re-cover with tin foil. Bake covered for one hour. Remove cover and bake an additional 15 minutes.
