Making the Base of Your Soup: Shredded Chicken
This casserole is made with shredded chicken. You can grab a rotisserie chicken from the grocery store and pull the meat off, but once you see how easy it is to make your own shredded chicken, you’ll be whipping up a batch on your own.

How to Make Homemade Chicken Noodle Soup Casserole
Once you have your base (shredded chicken), the rest is about as easy as it gets.
Sautee your favorite veggies, thicken with chicken broth and flour and then add your shredded chicken and egg noodles.
After a quick zip in the oven, you’ll be enjoying this amazingly hearty and healthy chicken noodle soup casserole in no time.

In a large saucepan, melt 2 TBS butter over low heat and add onion and celery.
Sautee until onion and celery are soft.
Add 1 TBS butter and flour, stirring continuously until it turns into a gummy paste (this is the magic).
Add chicken broth and whisk until lumps have disappeared.
Stir in shredded chicken and uncooked egg noodles.
Cook over medium heat for about 5 minutes or long enough to bring to boil.
Transfer to your favorite ungreased casserole dish. Top with crushed Ritz crackers and bake uncovered for 25 minutes, or until crackers are golden brown.
Let cool for 5-10 minutes before serving.

To make this gluten free, substitute for gluten free egg noodles, gluten free flour, and your favorite gluten free crackers. (Or omit the crackers altogether.)
Listen, when I first started making batches of shredded chicken, I kept things fairly basic. I used it in sandwiches and tossed it on my salads.
But I’ve come a long way, baby.
