    Stuffed Baked Sweet Pepper Bowls with Shredded Chicken and Brown Rice

    These stuffed peppers made with shredded chicken and brown rice are easy, healthy and downright delicious. You can make the shredded chicken base in the instant pot, the crockpot, in the oven or on the stovetop. And then simply finish everything off in the oven.

    This baked sweet pepper bowl hits all the feels. With its bold, bright presentation, it is easy to forget how much nutritional value is packed into each pepper!

    Making the Meat of Your Stuffed Peppers: Shredded Chicken

    The star of these stuffed, baked sweet peppers is the shredded chicken. You can grab a rotisserie chicken from the grocery store and pull the meat off, but once you see how easy it is to make your own shredded chicken, you'll be whipping up a batch on your own.

    If you make a batch of shredded chicken as part of your monthly meal prep, you can serve these stuffed sweet peppers with shredded chicken and brown rice at least once a week and have them on the table in no time!

    How to Make Stuffed Baked Sweet Pepper Bowls with Shredded Chicken and Brown Rice

    Once you have your base (shredded chicken), the rest is about as easy as it gets.

    Once you've made the shredded chicken, the rest is as simple as mixing and stuffing. Simply mix the chicken with brown rice, garlic, red onion, cilantro and cherry tomatoes.

    Fill your peppers with the mixture, top with sprinkle of goat cheese and pop them in the oven until heated through.

    So easy, and so delicious!

    Ingredients

    Scale
    • 4-5 Red, orange, or yellow peppers, seeded and cored
    • 2-3 Cups shredded chicken  (2-3 chicken breasts - click here to see the easiest way to make shredded chicken.)
    • ½ Cup crumbled goat cheese
    • 1 cup baby portobello mushrooms (chopped)
    • 2-3 garlic cloves, minced
    • ½ Cup fresh cilantro leaves (remove stems) and finely chop
    • 1 Medium Onion, chopped
    • ½ Cup cherry tomatoes
    • 2 Cups Brown Rice

    Instructions

    1. Preheat oven to 350°.
    2. Prepare Brown Rice per cooking instructions.
    3. Place all peppers in your favorite Pyrex or a large baking pan.
    4. In a large bowl, mix all ingredients (except goat cheese) together.
    5. Spoon into the peppers, filling right to the top.
    6. Sprinkle goat cheese on top.
    7. Bake for 30 minutes.

    MY FAVORITE SHREDDED CHICKEN RECIPE IDEAS

    Listen, when I first started making batches of shredded chicken, I kept things fairly basic. I used it in sandwiches and tossed it on my salads.

    But I've come a long way, baby. 

    I've figured out a way to incorporate shredded chicken into just about everything we're eating. I don't because - you know - the entire family might start a revolt against shredded chicken.
