Brighten Up Winter Mealtime with this Fresh Grapefruit, Avocado and Orange Juice Salsa

When we moved our family to Northern Michigan six months ago, we were not prepared for how much it would win our hearts. Every day we get to enjoy snow…really big, puffy, white snow! The kids are so busy with winter activities to fill their days that they return home with bright red cheeks, wide eyes, and stories filled with adventure. All of this winter wonderland stuff also means they come home – RAVENOUS.

Having quick and nutritious food ready to keep them fueled is our primary strategy. No one wants to go sledding, skiing or ice skating on an empty stomach! And, in a wonderland, we simply do not have time for the hangries!

Recently, I started making this home run fresh Grapefruit and Orange Juice Salsa with Avocado made with Florida’s Natural® Brand Orange Juice. This salsa is so bright and delicious that the kiddos have come to expect this bite of pure sunshine as part of our weekly menu!

HOW TO MAKE GRAPEFRUIT, AVOCADO AND ORANGE JUICE SALSA

I love this recipe because every bite brightens up a wintery day. Packed with Vitamin C and bold flavors that blend together perfectly, this salsa can be made ahead and enjoyed throughout the week to level up just about any dish in flavor and nutrition!

In a large mixing bowl, combine all ingredients, except the avocado (I add this as needed to ensure that the avocado stays as fresh as possible). Store the salsa in a sealed container in the refrigerator for up to 7 days!

ProTip: Once your whole, unpeeled avocado becomes ripe (soft), pop it in the refrigerator to stop the ripening process!

This salsa is so easy to make, my kids even enjoy helping and are always willing to try new things to pile it on! The winter wonderland has even inspired their courage for trying new food combinations and our pickiest eater is gobbling this salsa up with a vengeance.

From scooping warm tortilla chips to spooning it onto toasted baguettes with a sprinkling of feta or goat cheese – to adding it to our favorite scrambled egg breakfast or rounding out the delicious salmon fresh off the grill – this Fresh Grapefruit and Orange Juice Salsa with Avocado is the perfect complement to brighten up a winter meal.

Ingredients

Scale
  • ¼ CUP Florida’s Natural Orange Juice
  • 2 ½ CUP fresh grapefruit, chopped (about 2 grapefruit)
  • ¼ CUP minced red onion
  • 1 TBSP minced fresh jalapeno (add more to elevate heat!)
  • 1 TSP fresh lime juice
  • ½ TSP sea salt
  • 1 fresh avocado peeled, cubed or sliced

Instructions

Combine all ingredients and toss gently. Serve immediately.
