Looking for a simple lunch or dinner recipe this summer? Look no further than these orange juice marinated jumbo shrimp salad wraps.
They're fast and easy to whip together, and when you buy pre-cooked shrimp, you don't even need to turn on an oven or a grill. Whip them up in advance and plate them whenever you're ready to eat. Yum!
HOW TO MAKE JUMBO SHRIMP SALAD WRAPS
Before you get started, I need to warn you that these jumbo shrimp salad wraps taste delicious, crisp and refreshing, especially on a hot summer night.
You'll also need to accept that you're going to want to make twice what you think you'll need because even your kids that swear they don't like shrimp (or lettuce) are going to give them a try and then eat your portion.
Ahem.
Don't say I didn't warn you.
To get started, in a large bowl, mix ⅓ cup Florida's Natural® Brand Orange Juice, 2 tablespoons of capers, 3 cloves of garlic, one tablespoon of olive oil and 4 sprigs of fresh thyme. This will create your marinade.
Add one pound of peeled, de-veined, cooked jumbo shrimp.
Mix lightly, cover and refrigerate for at least two hours.
When you're ready to eat, add salt and pepper to taste and spoon shrimp into leaves of romaine lettuce.
Enjoy!
WE ONLY USE FLORIDA'S NATURAL®
Using Florida's Natural® orange juice is a total no-brainer for us. We've been drinking it for years.
Not only does it taste great, we love that it comes from pure Florida oranges.
There are no artificial flavors or ingredients and unlike other national brands, Florida’s Natural® only uses oranges hand-picked from their grower-owned orange groves in Florida. They never use imported oranges.
MAKE THESE JUMBO SHRIMP SALAD WRAPS FOR LUNCH OR DINNER TODAY
Let's go back to these amazing shrimp salad wraps for a minute. I really wish the internet had a portal that would allow you to reach through the screen and try a little sample of this recipe right now.
Is that so much to ask?
The crispy lettuce combined with the crunch of the shrimp...
The tangy orange juice plus the capers and the thyme...
It's perfection. It really is!
We usually keep it simple at our house and serve these with garlic toast, but you could serve it with a side of rice or pasta.
And while I keep saying you could serve these for lunch or dinner, they also make a gorgeous appetizer.
I took them to a neighborhood happy hour last week, and they were devoured pretty much immediately.
Another warning: if you take them to a neighborhood happy hour, eat some before you go, or you may not get any for yourself.

LEARN MORE ABOUT FLORIDA'S NATURAL®
Florida’s Natural® orange juice is grown by five generations of Florida families who share the same goal: producing the freshest-tasting juice around.
While other orange juice category leaders are owned by multi-million-dollar corporations that also produce soft drinks, Florida’s Natural® only produces juice.
And they’re good at it!
Their farmer cooperative is made up of 14 grower organizations that represent nearly 1,000 independent grower-owners. Together, their growers own more than 60,000 acres of Florida’s citrus, making them one of the largest cooperatives of citrus growers in the United States.
They all work together to produce the finest juice for Florida’s Natural®.
