If my great grandma were still alive, she would see this and say, “Well I never.” That was always her thing. And it meant that she was a little excited and tickled.

That is exactly what she would say about WATERMELON PIZZA.

  1. It’s good. Really good.
  2. It looks pretty. SO pretty.
  3. It’s easy. Crazy easy.
  4. Shoot – that’s all I can think of that follows that pattern.

But I will tell you this. The next time I have a summer party or need to bring something to a summer party, I will be serving this. Because there is just nothing more fun or laid-back fancy than a watermelon pizza.

How to Make a Watermelon Pizza

First, you’ll need to cut your watermelon into round discs. (Don’t worry – there’s a video on how to do that. Don’t try to be perfect. It’s boring.) But – spoiler alert – this is the hardest part.

Then, you’ll take a container of your favorite flavor of yogurt, and spread it on your pizza. We went with blueberry for this one, but strawberry, mango, banana – it could all be interesting.

Finally, sprinkle the fruit of your choice. We used raspberries and blackberries, but my kids said that next time they would like me to use strawberries and bananas. This is probably because they are ungrateful children that should just be thrilled that I made them a watermelon pizza instead of demanding different fruit next time. But whatever.

Oh – and then add any other toppings you want. Like granola or chocolate chips or nuts or even go crazy and add some feta cheese.
