Before we talk about how to make this Starbucks copycat drink at home, let's talk about how to order it at Starbucks. As far as orders at Starbucks go, this is fairly simple and straightforward.
1. Choose your size Short (8 fl oz), Tall (12 fl oz), Grande (16 fl oz), Venti (20 fl oz)

INGREDIENTS
Espresso or Coffee
The Starbucks version comes with espresso, but since you're making it at home, you get to decide what type of coffee to use. Shots of espresso, drip coffee or even cold brew coffee if you're turning this into an iced drink.
Milk of choice
Order it from Starbucks, and it will be made with Almond milk. But make it at home, and you can use what you love. Select your favorite dairy milk or choose your favorite plant-based milk. In addition to Almond milk, you could try oat milk, soy milk or coconut milk.
Brown Sugar & Granulated Sugar
Yes, you need brown and white sugars. Just trust us on this one.
Butter Extract
This is crucial to the recipe and worth waiting until it arrives in the mail (if you can't find it at your local grocery store). This is truly what turns this into a sugar cookie latte, so don't go without it. (This is our favorite brand).

INSTRUCTIONS
Sugar Cookie Simple Syrup
First, we're going to make our homemade sugar cookie syrup. This is a simple syrup that you can make in advance and use in all of your festive drinks throughout the season. A homemade syrup can sound intimidating, but trust me. It's so easy, and making one batch will last you for a couple of weeks!
Step 1: In a small saucepan over medium-low heat, combine the water, brown sugar, granulated sugar, Butter Extract, Vanilla Extract, and Almond Extract.
Step 2: Stir constantly and bring to a simmer.
Step 3: When all sugar dissolves, remove from heat and pour into a mason jar (or another glass, airtight container)
Step 4: You have now made a simple syrup. Store in an airtight container in the cabinet for up to two weeks.
Making Your HOT Sugar Cookie Latte
Now that you've made your syrup, we're going to make this Copycat Sugar Cookie Latte.
Step 1: Brew your espresso or coffee.
Step 2: Steam your milk. If you don't have a steamer, you can put it in the microwave for 30 seconds at a time, or heat it on the stove. Easy!
Step 3: Combine your coffee, milk and simple syrup and mix well.
Step 4: Top with whipped cream and sprinkles. Yum!
Hint: If you don't have a milk steamer, you can heat your milk in a small saucepan over medium heat, or you can just zap it in the microwave for 60-90 seconds. Easy peasy.
VARIATIONS
MAKE A SUGAR COOKIE ICED LATTE
Looking to turn this classic latte into an iced latte? No problem! Simply add ice to your glass, make sure the coffee or espresso is chilled (you can even use store-bought cold brew coffee) and use cold milk. And then you have your very own iced Sugar Cookie Latte
MAKE IT A DECAF
Because you're making this at home, you can substitute the espresso for strong decaf coffee.
