Ingredients

  • 14 oz can coconut milk
  • 1/2 cup Greek yogurt
  • 1/4 cup whole milk
  • 6 oz can tomato paste
  • 3 Cloves Garlic, Minced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons curry powder
  • 12 teaspoons Thai red curry paste
  • 2 tablespoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne
  • 1/4 teaspoon salt
  • 1/2 an onion finely chopped
  • 1 pound Boneless skinless chicken breast cut into bite-size pieces
  • 2 Tablespoons butter
  • Cooked white rice for serving

Instructions

  1. In a large glass bowl, combine the coconut milk, Greek yogurt, and milk.
  2. Stir in tomato paste, garlic, ginger, and all the spices.
  3. Spray inside of crockpot bowl with cooking spray.
  4. Sprinkle onion over the bottom, add chicken and pour the coconut milk mixture over the chicken so the chicken is completely covered.
  5. Add the butter, and place lid on crockpot.
  6. Cook on high for 4 hours or on low 6-8 hours. Stir occasionally during the cook.
  7. Season to taste with salt and pepper.
  8. Serve over Rice
