It’s no secret that I love pie. In fact, I come from a long line of pie eaters.
When I have extra time in the kitchen, I like to whip up some homemade pie crust using
my great-grandmother’s family recipe.
But when the pie craving hits, and I don’t have time to make a crust (or filling) from scratch – I head to my next favorite pie –
Simple Coconut Vanilla Cream Pie Recipe
First things first – grab your ingredients.
Specifically, a graham cracker crust, two packages of vanilla pudding and Silk Coconutmilk.
Now – I don’t want to lose you – but be careful with this part. It’s tricky…
Empty the two packages of pudding mix into a bowl.
And then – add 5 cups of Silk Coconutmilk to the pudding mix – the colder the better.
Are you still with me? This part is optional, but highly recommended.
Find a super cute kid to whisk the pudding mix for five minutes. Bonus points if you can find a kid wearing a bathing suit and a headlamp.
Now – I have no pictures of this step, and for that I apologize. Somehow everyone deserted me once the fun part (the stirring) was over.
But next, pour the pudding mix into your graham cracker crust.
Up to the very brim.
You might have some pudding left over – just eat it. (Or put it in the fridge to set and let your kids eat it.)
Cover the pie with tin foil, and pop it in the freezer overnight.
When you’re ready to serve, remove it from the freezer at least 10 minutes before cutting.
If you want to add a little lime flavor to the coconut and vanilla (which my husband loves), add some thin slices of fresh lime to the top just before you serve.
