Recipe: Cool Cucumber Pasta Salad

The perfect recipe for a potluck or summer cookout.

Ingredients

Scale
  • 8 ounces tube pasta
  • 1 tablespoon vegetable oil
  • 2 medium cucumbers, thinly sliced
  • 1 medium onion, thinly sliced
  • 11/2 cups sugar (I usually use 3/4 cup – the full recipe is a little sweet for me)
  • 1 cup water
  • 3/4 cup vinegar
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic salt

Instructions

  1. Cook pasta according to package directions; drain and rinse in cold water.
  2. Place in a large bowl; stir in oil, cucumbers and onion.
  3. Combine remaining ingredients; pour over salad and toss.
  4. Cover and chill for 3 – 4 hours.
  5. Serve with a slotted spoon.

  12. This is a very very great recipe. My daughter’s favorite. She’s been in hospital, making this for her when she gets home. I use the whole 16 oz of pasta. We love our pasta. Plenty of sauce. Don’t need to add extra.
