I don’t know if I’ll ever get to a point where our evenings don’t feel completely hectic – between homework and sport practices and laundry and… life.
But thanks to simple meal hacks – like these lasagna grilled cheese sandwiches – I’m simplifying our lives as much as possible, while still making sure to eat a family meal at home more nights than not.
It’s no secret that I’m a fan of On-Cor’s multi-serve entrées. My kids are obsessed with most of their products (proof of that can be found here, here and here).
But I have to say that these lasagna grilled cheeses sandwiches might be their favorite On-Cor entrée hack yet.
To start, I make two On-Cor Lasagnas with Meat Sauce. They’re so simple to make – just pull them from the freezer, take them out of the container, and pop them in the oven.
While they’re cooking, I help the kids with homework, crank through some laundry and occasionally challenge my kids to a dance contest in the kitchen.
Spoiler – they always beat me at dance contests in the kitchen.
That night, we enjoy a delicious On-Cor Lasagna with Meat Sauce along with a side salad. It’s really, really good, and everyone leaves the table full and satisfied.
And that’s when the real magic happens.
I purposely make two lasagnas so that we have plenty of leftovers. My son loves to take lasagna in his lunch, and I love to find leftover lasagna in my fridge later in the week.
You know – when everyone has to be at practice at different times and my husband is running late from work, and my meal plan for the week somehow didn’t happen, and I have no idea what to serve for dinner…

For us, that’s when it’s lasagna grilled cheese time!
I grab the leftover lasagna, slice some French bread and whip up Lasagna Grilled Cheese Sandwiches.
These delicious sandwiches take lasagna up a notch – by adding extra cheese and crispy grilled French bread.
The kids LOVE it, and I love that it is such a quick meal to pull together.
I seriously feel like a magician in the kitchen. And yes – I do realize that this makes me officially old – because finding a way to eat the same meal two nights in the same week without anyone noticing that they’re eating leftovers is SUPER exciting in my life!
To make these sandwiches, slice a loaf of French bread into thick slices. Butter one side of your slice of bread, and put it butter-side-down in a frying pan over medium-low heat. Add a sprinkling of mozzarella cheese, a slice of On-Cor Lasagna with Meat Sauce, another sprinkling of cheese, and then top with your second slice of French bread (butter side up).
Grill it slowly until the cheese starts to melt, and the lasagna heats up. Flip your sandwich carefully to grill the other side.

Have leftover lasagna? These lasagna grilled cheese sandwiches are the ultimate family comfort food. Made with On-Cor’s Lasagna and Meat Sauce, French bread and cheese, your entire family will be begging for this delicious and simple meal every night of the week.
- 1 slice of On-Cor Lasagna with Meat Sauce, prepared and cooled (perfect for leftovers!)
- 2 tablespoons shredded mozzarella cheese
- 1 tablespoon butter
- 2 slices French Bread
- Butter one side of both slices of French bread.
- Place one slice of French bread butter-side-down in a frying pan over medium-low heat.
- Add 1 tablespoon of mozzarella cheese.
- Add 1 slice of On-Cor Lasagna with Meat Sauce
- Add 1 tablespoon of mozzarella cheese.
- Top with slice of French bread, butter-side-up.
- Grill slowly until cheese is melted and lasagna is heated through.
- Carefully flip sandwich to grill other side.
