I think I never told you because I didn’t want you to think less of my husband. But since I’ve told you pretty much everything else about him over the past seven years, I might as well share this…
My husband is a barbecue sauce snob.
I’m not proud of it.
And Lord knows I’ve tried to change him. (Oh how I’ve tried to change him.)
But there is no changing a man that is snobby about his barbecue sauce.
I first discovered this when I whipped up a batch of my mom’s homemade barbecue sauce during our early days of marriage.
He was critical.
It’s possible that I considered scheduling a doctor’s appointment for him on the spot because clearly something must be seriously wrong with a man that doesn’t love my Mama’s barbecue sauce.
Since then, there have been countless barbecue sauces that he has found unfit for his very “refined” and highly sensitive taste buds.
So when Kroger told me about Treasure EmporiYum, a carefully curated collection of delicious discoveries that are exclusive to the Kroger Family of Stores, I decided that my husband would be the perfect person to test out their Private Selection Kentucky Bourbon BBQ Sauce.
It’s made with barrel-aged Kentucky Bourbon and is small batch certified. (I have no idea what that means, but it sure sounds important!)
And I know this shouldn’t matter at all, but it also comes in a glass bottle which feels super luxurious and special (even though it’s sold at a crazy low price)!
But – seriously – get your hands on one of these bottles, and you will see why I considered buying them to give as gifts. (They look and feel that nice!)
For a healthy, zestful twist on a classic BBQ bowl, lather freshly sautéed baby portobello mushrooms with the incredibly quenching Private Selection Kentucky Bourbon BBQ Sauce. When coupled with brown rice, sliced avocado, grated cheese, and other vibrant vegetables of your choice, each mouthful is more satisfying than the last!
1/2 cupPrivate Selection Kentucky Bourbon BBQ Sauce, plus more for drizzling 2 cups brown rice 4–5 baby bella mushrooms cleaned, diced 3 cloves fresh garlic 2–3 TBS Extra Virgin Olive Oil 1 fresh avocado 3/4 cup diced red pepper 1/2 cup diced purple onion 1/4 cup fresh cilantro, plus more for garnish 1/4 cup fresh spinach 1/2 cup extra sharp white cheddar cheese shredded Coarse sea salt & fresh cracked pepper to taste
Prepare brown rice according to instructions.
Sauté garlic, onion and mushrooms in extra virgin olive oil until slightly browned, reduce heat to simmer.
Stir in Private Selection Kentucky Bourbon BBQ Sauce and salt and pepper (to taste), then add red pepper and fresh spinach.
Cook for 3 minutes and set aside.
Grate extra sharp white cheddar cheese, slice avocado and prepare cilantro.
Add vegetables to rice and mix together.
Drizzle a generous amount of Private Selection Kentucky Bourbon BBQ Sauce over rice and vegetables.
Next, top each rice bowl portion with grated extra sharp white cheddar cheese, fresh cilantro and sliced avocado.
This is the type of recipe that you can really mix up to make it your own. Top with your favorite vegetables (or what you have in your fridge).
This recipe also tastes great as leftovers, and even cold right out of the fridge. Yum!
