This delicious, refreshing salad can be a meal on its own – or a wonderful side.

Apple Arugula Salad

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons honey
  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • ½ teaspoon orange zest
  • 4 cups baby arugula
  • 1 large green or pink lady apple, cored and thinly sliced
  • ½ cup coarsely chopped raw (or toasted) hazelnuts


  1. Add the first 6 ingredients together in large bowl, and gently whisk until emulsified.
  2. Add the arugula and apple to the bowl gently toss to combine.
  3. Serve on plates and sprinkle with the crushed hazelnuts.
